Honey & coconut cupcakes

Every now and then, my brother will cry about how he can’t eat the things that I bake because it always has sugar in it. Now the thing is, he doesn’t eat sugar, like AT ALL, I don’t understand how he’s my brother? But anyway, the other day he asked me to bake him a honey cake and I was like, say no more! I got you bruh, I gat chuuuuu! And so, I decided to put together a honey & coconut cupcake recipe.

Now, there are two ways you can make this:

  1. you can make it with just honey and no sugar at all.

  2. you can make it with ½ cup sugar and ¼ cup honey

I would personally make it with sugar and honey because I don’t like the aftertaste honey has, but even when I made it with only honey and ate it with the frosting, it tasted just fine. In short, if you’re trying to be healthy, make it with just honey, otherwise be like me and eat your sugar because YOLO. LOL. I’m kidding, and still trying to cut down on the sugar. Anywhoooo, let’s move on to the recipe, shall we? We shall.

Ingredients

For the cupcake

  •  ½ cup honey (or 1/4 cup sugar and 1/4 cup honey)

  • 3 eggs

  • ½ cup milk

  • ½ cup vegetable oil

  • 2 cups all-purpose flour

  • 2 tsp baking soda

  • ¼ tsp baking powder

  • 1 tbsp vinegar

For the frosting

  • 80 gm unsalted butter

  • 200gm cream cheese

  • 1 cup confectioner’s sugar

  • ½ tsp vanilla

  • 1 ½ cup shredded coconut (optional)

Instructions

  1. Preheat oven to 350F or 180C and line your cupcake tray with liners

  2. In a bowl, mix the flour and baking powder. Set aside

  3. In another bowl, whisk the eggs and honey (if using sugar, add that here as well). Next, whisk in the milk and oil

  4. Then slowly add the flour into the egg mixture

  5. Combine vinegar and baking powder and quickly add this to the batter. Whisk, until well combinedSAMSUNG CSC

  6. Pour the batter into the cupcake liners and bake for 20-25 minutes or until toothpick comes out clean when inserted in the center

  7. While that’s baking, make the frosting by whisking all the ingredients together, put it in a piping bag and set aside

  8. When the cupcakes are done and completely cool, pipe the frosting on to the cupcake and dip the top in shredded coconut.

  9. Voila! You now have honey & coconut cupcakes. Enjoy!
