Peanut butter cookies

Hello beautiful people,

I’m back with another cookie recipe! This one is for all the peanut butter lovers (and if you are someone who doesn’t like peanut butter, you might after eating this cookie :p). Today, I shall share with you a super easy peanut butter cookie recipe. It literally takes less than 30 minutes to make and tastes great.

What I like most about this cookie is that it’s dipped in chocolate and that gives it the right amount of sweetness. It balances out the saltiness from the peanut butter. And like most recipes you can add other ingredients to it after dipping it in chocolate. You could sprinkle it with shredded coconut, sprinkles, nuts etc.

Ingredients

  • 1 ½ cup all purpose flour
  • ½ tsp baking powder
  • pinch of salt
  • ½ cup oil
  • ½ cup granulated sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ cup smooth peanut butter
  • 1 cup melted chocolate

Instructions

  1. Preheat oven to 350F or 180C
  2. In a mixing bowl, sieve the flour baking soda and salt. Set aside
  3. In another bowl, whisk the oil along with granulated and brown sugar for 2 minutes
  4. Next, add the egg and vanilla. Whisk until well combined
  5. Add the peanut butter next and whisk
  6. Add the flour mixture to the wet ingredients and mix until you have a dough
  7. Scoop a little dough and flatten them on your baking (2 inch apart) tray until you have used up all the dough
  8. Bake the cookies for 11-13 minutes. Allow the cookies to cool completely
  9. Once cooled, dip half the cookie in melted chocolate and allow the chocolate to cool and harden
