Vegan brownie

It’s that time of the week! I’m back with another recipe for you guys. Today, I baked some vegan brownies. Yes, it’s possible.

One of the most popular recipes I’ve posted on this blog happens to be the vegan chocolate milkshake, so I thought of baking some vegan brownies. It was my first time baking these brownies and not gonna lie, I was a little surprised at how good they turned out to be. It’s part banana bread, part chocolate brownie and super easy to make

On to the recipe!

Ingredients

  • 1 cup whole wheat flour
  • 1/3 cup unsweetened cocoa
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup + 1tblsp coconut oil. Plus 1 tsp to grease the tray
  • 1 cup organic sugar
  • ½ tsp vanilla
  • 1 ripe banana (mashed)
  • ¼ cup almond milk
  • ½ cup sliced almonds for sprinkling (optional)

Instructions

  1. Preheat oven to 180C / 350F
  2. In a bowl, sift together the whole wheat flour, cocoa powder, baking powder, baking soda and salt. Set aside
  3. In another bowl, whisk the coconut oil and sugar
  4. Next, add the mashed banana (making sure there are no big pieces), almond milk and vanilla. Whisk until well combined
  5. Add the dry ingredients to the wet ones and whisk until you get a nice smooth batter
  6. Grease the baking tray (I used a Wilton 20.3×20.3×5.08cm) with coconut oil
  7. Transfer batter into the tray and bake for 20-25 minutes
  8. Sprinkle with almonds as soon as it’s out of the oven
