Chocolate crinkle cookie

Back with another cookie recipe! This time it’s chocolate crinkle cookie, these cookies almost taste like brownies- it’s chocolaty, it’s fudgy, it’s amazing! These are super easy to make, but since the dough is quite sticky, it needs to be refrigerated before baking (I know, but it’s worth it). One thing to keep in mind when baking these cookies is that when you place the cookie balls on the tray, make sure to leave enough space between them because the do expand as the bake.

On to the recipe!

  • ¼ cup vegetable oil
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa
  • 2 large eggs
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1 cup all purpose flour
  • 2 tblsp almond flour/crushed almonds (optional)
  • ¼ cup confectioner’s sugar

  1. Combine the oil, sugar and cocoa powder. Mix until well incorporated
  2. Next, add the eggs and vanilla. Whisk on low speed until well combined
  3. Add the salt, baking powder, baking soda, all purpose flour and almond flour. Whisk on medium speed until you have a smooth dough. The dough may seem sticky and not too stiff, but that’s normal
  4. Cover the bowl with plastic wrap and refrigerate for 1-2 hours
  5. Preheat oven to 350F or 180C and line baking tray with parchment paper
  6. Roll the dough into 1.5 inch ball and then roll them into confectioner’s sugar (make sure to cover the entire ball)
  7. Place the balls on the prepared sheet (2 inches apart) and bake for 10-12 minutes
  8. Allow the cookies to cool completely
